LA MONDINA IS NOW HIRING!
A new Italian Restaurant in Brielle N.J.

Now Interviewing: LINE COOKS
Compensation: Starting at $14 - $18 per hour, plus overtime (negotiable based on experience)

Year round restaurant open for dinner service, parties and catering looking for motivated and skilled employees. Previous experience is a must on most positions, but training is available for people new to the restaurant industry.
Our goal is to bring a piece of Italy to our clientele through authentic fresh food and regional wines and cocktails, while paying attention to the smallest details to separate our diner s experience from all others. We have revamped our establishment and offer high end food in a casual setting.
Cleanliness, style and personality, with knowledge of food and the food service industry is a must at La Mondina. Available hours and pay rates will be discussed at interview, and please make sure to have a resume and references available upon request. THE JOB OF A LINE COOK:

Prep stations daily, making sure to label and date while paying attention to FIFO (first in, first out)
Properly cook & produce all menu items within your designated station in accordance to the standards of La Mondina
WORK FAST, EFFICIENT and CLEAN.
Clean equipment; including on-line refrigeration, hot/cold line equipment, work space and tools used on the line.
Making sure to be responsible for line tools; spoons, measuring devices, ladles, steam tables, knives, tongs and all other daily tools.
Maintain area of walk-in refrigerator designated to your position; organize and box out prepped items by date and item.
Dress appropriately; Proper shoes, no jeans or shorts/basketball shorts, or sweat pants. Preferred are; work shirt or chef coat and apron with no other restaurant logos. We can help source these items if need be.
Take care of tools and equipment; the better they work the easier your task will be.
Be on time to work every day. If there is a problem that is causing a delay, please reach out to the Chef or a manager.
At night, check-out with Chef on duty. Cleanliness will be checked along with inventory of proteins on a nightly basis.
Change out containers every night for clean ones, making sure to wrap and refill for the next day.
Sweep and mop the entire line as a team, including behind the equipment.
Help dishwashers out; clean knives personally, don t overfill station with pans, if you can clean it than do it yourself. Help not make a mess.
Execute the production of menu items to the standards of the restaurant; if you need an extra minute, tell the Expo, and take the extra time. If it s wrong, it will be redone.
If time off is needed, please allow two weeks in advance notice. There will be a request-off book that you will be allowed to use.
Emergencies; they happen, but if you will not be able to make it or will be very late please reach out to the Chef on duty or upper management. We understand, we just need to be prepared.

Our focus is to serve rustic Italian fare using quality ingredients sourced from local purveyors. Menus will feature seasonal offerings prepared in an above average, homestyle fashion including: Appetizers, Brick Oven Pizzas, Main Plates & Pastas.
At the bar, we offer handcrafted cocktails using premium spirits, as well as affordable wines by the glass or bottle & draught beer.

THE BANQUETS
La Mondina features multiple private dining spaces to accommodate parties for intimate gatherings as well as larger events for over 100 guests.

LA MOINDINA CULTURE
What is La Mondina?

Le Mondine or The Weeders , we re an agricultural workforce made up of mostly women in northern Italy. During the 1940 s, these women took to the rice fields to maintain Italy s massive rice economy. Not only did they take on the grueling task of weeding the rice fields, but they also won the fight to gain cultural recognition for women in an era of unequal opportunity. These hard-working ladies always held their composure, regardless of their daily conditions.
